Bacon Horseradish Dijoli
Growing up, heading to a baseball game meant more about the food to me than the game itself. Don’t get me wrong – it was super fun to watch the local minor team (shout out to the Bridgeport Bluefish!), but what I was concerned with was all of the glorious food options. ESPECIALLY all the things we didn’t make at home – churros, cotton candy, ketchup with a side of corn dogs! Every bite was better than the last. And we all know the undisputed king of ballpark food is the jumbo soft pretzel. Naysayers will start yelling about hot dogs and cracker jacks. NAH FAM. It’s always been the pretzel. Extra salty with tons of yellow mustard on the side. Yellow mustard that finds its way under your nails, on to your shirt, and pretty much everywhere except the dang pretzel.
These days, I’m smack in the middle of Braves Country (#FILA) and there’s a huge game on tonight. We’re playing the Nationals and a win gets us one step closer to retaining our 1st place status in the NL East. *Insert dramatic music here* But that’s nothing compared to the pressure on the snack spread – it’s going to have to live up to all of the gameday stress eating! In pretzels I trust. Although this time, I’ll be sticking with mini-twists. Much more suitable to munching then twenty jumbo soft pretzels.
To jazz them up, I have a glorious horseradish dijoli dip that you can customize to your level of spice. Whether you’re more mild-mannered and all about the mustard or you want to clear out your sinuses for the next week, this dip has your back. The main punch comes from the horseradish which is technically a root. It looks similar to ginger on the outside except it doesn’t usually have as many weird bumps doing their own thing and going off in a bunch of different directions. You’ll want to make sure you get prepared horseradish for this dip – not a horseradish mayo, spread, dip, or anything else that it might be cut into. True prepared horseradish. Trust me on this. Try starting out slowly (with a teaspoon or two at first) and then working your way up if you need more bite. As my mom always said, you can add more, but you certainly can’t take it away.
If you aren’t a pretzel lover like me, this dip works with lots of different vehicles to its spicy, creamy goodness! You can also use corn chips, cubed bread, raw veggies, corn dog bites, sliced sausage, or anything you like to put mustard on. Draw on some of those late-night hunger craving creations that always get weird but by some miracle work incredibly well together (basically Taco Bell’s entire menu). Whatever route you decide to go, this dip is sure to knock it out of the park!
Bacon Horseradish Dijoli
Serves 12|Prep: 5 Minutes| Chill: 30 Minutes
Ingredients
- 1 cup mayonnaise
- ½ cup dijon mustard
- 2 – 4 tsp. prepared horseradish
- ¼ cup crumbled, cooked bacon (extra crispy!)
Steps
- Combine mayonnaise, mustard, half of the bacon, and 2 tsp. horseradish in a medium bowl.
- Test for spice level – add more horseradish by the 1/2 teaspoon until desired level is reached.
- Top with reserved bacon.
- Cover and chill 30 minutes to let the flavors develop.
- Serve with your favorite snack – pretzels, smoked sausage, bread cubes, or veggies!
